However, its flesh is a dark salmon orange with a juicy sweet flavor. This variety prefers a hot, dry growing season and is best when picked slightly green and ripened indoors.

The Cocozelle is excellent for slicing, frying, and steaming and is also a good freezing and canning variety. Pick often when the squash is young to prolong harvest.
