Zone 8 - What to Plant in January

January is the time to start your garden in zone 8. To be ready for the last frost you should start all transplants inside in January so you're ready to go. January is your first window to start your indoor sowings and order your seeds for the spring season. The next two months are the most important for starting your vegetables on time. Start your tomatoes, peppers and other vegetables to be ready for spring transplant!

The Mini Greens Blend is a colorful mixture of red and green leaf lettuce varieties that creates a wonderful bright combination. This blend is neither considered a sprout nor true baby leaf lettuce either, these delicious mini greens are somewhere in between! The Olympia is a top-notch smooth leaf hybrid spinach that has a great flavor. This spinach Hybrid has thick and dark green leaves that grow upright. The Olympia is highly recommended for spring, summer, fall and over wintering crops because it resists bolting under high temperatures and long day conditions. Treated seed.

King Richard is a newer leek variety that grows well throughout the United States. This leek variety is a summer type, non-bulbing leek that grows to 12" in length. King Richard has green leaves with white inside. This leek is a very early maturer and is not sufficient for overwinter growing.

The White Russian Kale is a delicious dark green oak leaf cut kale with white stems that is amazing when cooked or eaten raw. This variety has a crisp sweet flavor that only intensifies when it is cooked. This popular kale is also disease resistant.

The Dwarf Siberian Kale leaves are perfect as a garnish and in hearty winter dishes. This frilly green and purple kale dances in the crisp early morning cold and thrive. Why? Because its roots are from Russia!

Hungarian Hot Wax peppers are a popular medium-heat chili variety known for their distinctive yellow color and elongated, tapering shape, typically growing about 6-8 inches long. As they mature, these peppers transition from a vibrant yellow to a bright red, adding a visual appeal to any dish. With a Scoville heat rating of 5,000 to 15,000, Hungarian Hot Wax peppers provide a nice kick without overwhelming heat, making them versatile for various culinary uses. Originating from Hungary, these peppers are often used in traditional dishes, pickled for a zesty snack, or incorporated into sauces and salsas. Their crisp texture and sweet, tangy flavor enhance both fresh and cooked preparations. Harvesting usually occurs when the peppers are bright yellow, around 70-80 days after planting, but they can also be left on the plant to ripen to red for a slightly sweeter taste. Hungarian Hot Wax peppers thrive in warm climates and well-drained soil, making them a favorite among home gardeners. Their unique flavor profile and moderate heat level make them a delightful addition to a wide range of dishes, from stir-fries to salads.

A 1918 The Great Northern Seed Company says this variety is not withstanding its immense size. This variety does not get hollow or pithy and its flesh remains sparkling white, solid, crisp and juicy. This slower bolting variety has the mildest flavor with a tender, crunchy texture.

Fragaria vesca var. vesca, aka Woodland Strawberry, has white flowers and small, very flavorful crimson berries. This everbearing alpine strawberry will produce fruit all summer long.

The Baby Roma, also known as the "Cherry Roma," is a miniature roma-shaped tomato that is bursting with an intense sweet flavor. This tomato variety is great for garden snacking, adding into salads and growing for market production. The Baby Roma plant produces an incredibly heavy set of 1” grape-type tomato fruits that have a very long shelf life. 

The Moneymaker Tomato is a terrific, high yielding heirloom that produces delicious, bright red and smooth fruits that are perfect for fresh eating. This variety's vine can grow to 5-6' and produce very heavy yields of 4-6 ounce fruits. This tasty heirloom tomato does well in hot humid climates and greenhouse growing. The Moneymaker originates from England and produces vigorous vines that should be staked for best results.

The Golden Helios Radish is named after the Greek god of the sun. This olive-shaped radish is bright yellow with a crispy white flesh and is truly one of the most beautiful radish! Not only is Helios a beauty, it is also tasty with a sweet and mild flavor.

The Italian Ice is a small white to cream-yellow tomato variety with a sugary sweet flavor that is bursting with flavor! This variety produces high yields of up to 1" sized fruits that ripen from green to white to cream-yellow color. The tomatoes are edible once they turn their famous yellow white. The ripened tomatoes are incredibly sweet, which makes this variety a double threat! This tomato plant is a heavy producer that will grow and produce tomatoes up until the first frost. This variety should be staked well as it will grow large and vine off! The Italian Ice will be one of the first tomato varieties to ripen in the garden.

We believe this is the best tasting tomato available and even beats Brandywine for flavor. Productive plants produce large crops of 12 oz. fruits. Excellent tomato flavor. This strain was obtained from J. D. Green in Tennessee and is thought to be from the Cherokee Nation. Plants are indeterminate, but seldom grow more than 4' tall.

Get a head start with the early maturing Early Jalapeno Pepper. This pepper variety continuously produces a dark green, thick skin that forms to the shape of a cone. Enjoy the Early Jalapeno fresh or pickled on salads, dips or tacos!

The Red Russian Kale is a very tender, colorful specialty kale for salad mix and bunching. This variety is a special, refined strain. Its stems are purple and leaves are deep gray-green with purple veins. This flat, noncurled, and tooth-edged kale has a wonderful taste. Red Russian matures medium-tall and leaves are tender compared to other kales.

The Cimarron is a very beautifully colored romaine lettuce! This tasty lettuce has bright green-red leaves that fade to deep red tips. This romaine type lettuce has good disease and bolt resistance. Cimarron is a favorite among gardeners for its beautiful hue and crispy texture in salad mixes!

A green beauty in any vegetable garden. Ripens with a green exterior and interior that is sweet and tart! One of our favorite tasting green tomato varieties. Will mature to between 8-12 ounces and when mature with have a yellowish tint on the bottom of the fruits.
