The Austrian Winter Pea, sometimes called black pea or field pea, is a great cool season legume for cover crops, wildlife and winter grazing! This cool-season, annual legume has good, nitrogen-fixing capabilities. The Austrian Winter Pea is a low-growing, viny legume which has been shown to fix over 200 pounds of nitrogen per acre per year. It has hollow, slender and succulent stems, 2 to 4 feet long. The foliage is pale green, and the flowers are colored, usually purple, pink or reddish. The Piper Sudangrass is a great catch crop for excess nitrogen that produces heavy amounts of organic matter and suppresses weeds. This grass grows quickly at heights up to 7 feet. The Lincoln Pea is an extra tender variety with a sweet flavor and high yields. This pea variety was introduced just after World War II during the peace time. Lincoln quickly became a popular home garden variety due to its versatility, as it can be eaten fresh, froze or canned. Its pods can reach 4-5" in length and are full of 6-9 sweet, tender peas. Lincoln does well in heat and should have a small pea fence or some sort of support or its vines.
True Watercress is a delicious highly nutritious aquatic herb. This watercress has a wonderful fresh peppery-tasting flavor. Being semiaquatic, this cress is a creeping perennial whose leaves are popular in salads, sandwiches and as a garnish. True Watercress grow rapidly in in damp soil and can be grown in pots of soil placed in a tub of water if water is changed weekly.

This Swiss Chard has a deep crimson stalk that runs into the veins of the leaves. The leaves are glossy dark and heavily crumpled. Cardinal’s stalks can be cooked like asparagus while the leaves like spinach. However both can be used raw. Certified Organic.

Rouge D'Hiver is not just beautiful, but it is also very tasty and very easy to grow. This lettuce is a home favorite for resisting heat and cold stress if well watered. This variety has been recently resurrected.
The Ruby Red Lettuce is an early variety that produces good yields of bright green to ruby red colored leaves. This beautiful variety is a very heat tolerant lettuce that is slow to bolt. Ruby Red's color does not fade in the hot weather! This lettuce is excellent for adding color to salads or garnishes.
The Joi Choi Bok Choy has very tender dark green leaves with crisp white stalks. This variety is slow bolting with high yields. Joi Choi Bok Choy is perfect for growing in fall and winter, as it is cold tolerant.
Great way to fix nitrogen and add organic matter to the soil! A great mix of grass and legume cover crops. Hairy Vetch works well for nitrogen fixation while Rye adds organic matter and protects the less hardy vetch from winter damage. If planted in fall it comes back early spring with heavy growth. The Bambino carrot is a super sweet baby gourmet carrot. The color develops quickly and can pull early. This carrot produces 4 in. cylindrical blunt roots, very small core, smooth skin, a deep orange color and small dwarf tops. The Bambino was developed for canning & pickling whole and must be harvested early.
