Hardneck Garlic
Hardneck garlic sends up a stiff central flower stalk, called a scape, that gardeners can snip in early summer for a bonus harvest. Bulbs typically form a single ring of large, easy-to-peel cloves around the woody stem. Hardneck types are prized for rich, complex flavor, from the fiery heat of Rocambole to the bold depth of Purple Stripe and Porcelain varieties. They thrive in regions with cold winters, which they need to properly develop and divide into cloves. Plant cloves in fall, cut the scapes as they curl, and cure bulbs well before storing.
