Before Planting

Horseradish spreads aggressively from overlooked root pieces, so choose a permanent isolated bed or large bottomless container in full sun. Deep, loose soil produces straighter roots than compact clay. Remove stones and perennial weeds before planting, and handle roots separately from other crops.

Planting

Plant root cuttings in early spring. Lay each set at an angle with the crown or larger end near the surface and the smaller end several inches deeper, following the supplied orientation. Space plants widely, cover firmly, and water; even small misplaced pieces can become future plants.

Watering

Supply regular moisture during early leaf growth and root enlargement, but do not keep the bed waterlogged. Mulch limits drying and prevents competition. Irregular severe drought can make roots woody and excessively pungent.

Fertilizer

Compost incorporated before planting is often adequate. Where soil is lean, a moderate balanced application in spring supports leaf growth without creating forked, soft roots. Avoid fresh manure immediately before planting.

Harvesting

Dig after frost kills the tops in late fall, or harvest very early the following spring before growth resumes. Lift the entire crown deeply and save selected side roots for replanting. Freshly grated root is powerful; prepare it with ventilation and eye protection.

Tips

For smoother main roots, some gardeners lift the crown carefully in summer and remove small side roots before replacing the soil. Harvest thoroughly to control spread, and never till unwanted plants because chopping distributes viable pieces.

Pests & Diseases

White rust, bacterial leaf spot, mosaic viruses, and root rots affect horseradish. Start with clean root cuttings because viruses and internal discoloration move with planting stock. Discard roots showing dark vascular streaks or decay, rotate brassicas, and control volunteer horseradish that can preserve disease between plantings.

Flea beetles, imported cabbageworms, slugs, and white rust may damage foliage, though roots often remain usable. Rotate away from diseased brassicas, remove volunteer plants, and avoid leaving infested root fragments throughout the garden.
