Before Planting

Celeriac grows best in a full-sun site with deep, fertile, consistently moist but well-drained soil. Work in compost and correct fertility and pH according to a soil test. Prepare a level, weed-free bed and harden transplants gradually, since uneven moisture or prolonged cold can reduce root quality or trigger bolting.

Planting

Start celeriac indoors 10–12 weeks before the last spring frost. Surface-sow or barely cover the fine seed, maintain about 70°F and steady moisture until germination, then provide bright light and cooler conditions. Harden seedlings without exposing them to prolonged cold, and transplant after the soil has warmed. Set plants at the same depth they grew in their containers.

Watering

Keep soil consistently moist throughout growth, especially while the swollen stem develops. Water deeply during dry periods and avoid large moisture fluctuations, which can produce small, coarse, or cracked roots.

Fertilizer

Feed celeriac moderately during active growth with a balanced fertilizer. A light nitrogen side-dressing may help after establishment, but excessive nitrogen delays and reduces swollen-stem development.

Harvesting

Harvest celeriac when roots reach the expected diameter, length, and full color. Loosen surrounding soil before lifting to prevent breakage, and sample periodically because tenderness and flavor decline when roots become oversized.

Tips

Control weeds around celeriac while seedlings are small, using shallow cultivation to avoid root damage. Thin promptly, mulch only after establishment, and cover exposed shoulders if light causes greening.

Celery early and late blights also infect celeriac; Sclerotinia pink rot and aster yellows can damage roots and foliage.
