Plan beyond summer with vegetables for fall planting, winter harvest, and early spring regrowth. Choose the approach that suits your local winter:

Cold-hardy favorites: Climate-appropriate garlic, Dwarf Siberian, Blue Curled Scotch, Red Russian and White Russian kale, plus Nebuka Evergreen bunching onions. Even hardy varieties may need protection in severe winters.

Winter harvest with protection: Bloomsdale and Renegade spinach, Champion and Vates collards, American Flag leeks, and Tatsoi benefit from row covers or tunnels where needed. Established carrots, Hollow Crown parsnips, and burdock can be held in the ground under mulch where conditions allow; sow them early enough to size up before winter.

Mild-winter crops: Walla Walla Sweet onions, Broad Windsor fava beans, Green Globe artichokes, Early Purple Sprouting broccoli, and White Magic cauliflower need suitable regional planting schedules and winter conditions. Onion day length and fall plant size matter.

Frost tolerance is not a guarantee of surviving a hard winter. Establish plants before growth slows, follow local guidance, and harvest biennial vegetables before spring bolting affects quality.
