Fresh Carrot Cake Recipe
Carrot cake is a favorite for any family or friend gathering. The key to a good carrot cake is using fresh garden ripe carrots straight from your own garden. Try this recipe and your sure to satisfied!What You Need
1 1/4 cup Vegetable oil
4 eggs
2 cups sugar
2 teaspoons vanilla extract
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon
2 cups flour
1 tablespoon salt
3 cups fresh garden carrots
Icing ingredients:
1/2 cup softened butter
8 oz cream cheese
4 cups confectioners sugar
1 teaspoon vanilla extract
Preheat oven
Preheat your over to 350 F degrees. Also grease and flour a 9x13" pan.
Combine cake ingredients
In a large stirring bowl, beat together eggs, vegetable oil, sugar, and 2 teaspoons of vanilla. Next mix in the flour, baking soda and powder, salt, and cinnamon. Lastly combine the fresh garden carrots. Pour this into the grease 9x13" pan.
Bake and let cool
Bake the cake mix in a preheated oven for 40 to 55 minutes, or until took pick inserted in middle comes out clean. Let cool.
Make frosting and spread
In a small to medium bowl, combine softened butter, softened cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until smooth and spread over cooled carrot cake. Enjoy!
