Zucchinis can pile up from just a couple plants in the garden! Incorporating them into meals can be a tough task. Try this great tasting breaded zucchini recipe for a snack or as a great side dish to any meal.What You Need 6 small-medium, freshly pick zucchinis Vegetable oil 3 eggs 1/2 cup milk 2 cups flour 1 cup yellow corn meal 1 tablespoon pepper 1 tablespoon garlic powder 1 tablespoon salt 1 teaspoon basil (optional) Cut zucchini into small slices Wash the zucchini well before cutting. Chop zucchini into small bit size pieces as seen in picture.Mix milk and eggs Heat up vegetable oil and mix breading ingredients Pour enough vegetable oil into your pan to cover the bottom edges. Turn heat on medium and check by sprinkling flour onto hot oil. If oil begins to simmer the vegetable oil is ready. Combine all other ingredients into separate mixing bowl and evenly mix ingredientsBread zucchini and cook Dip zucchini in egg and milk mix then dip again evenly into the breading mixture. Gently place the zucchini into the hot vegetable oil for cooking. 3 minutes on each side should provide a crispy brown out crust and a perfectly cooked zucchini inside.
